I'm Jasma, a recipe developer making things I think are nice to look at! I can't quite tell you what category my food falls into, as my recipes are influenced by both the Eastern and Western cuisines I'm exposed to as a Chinese-Canadian. I also share both sweet and savoury recipes, since there's no possible way I can choose between cooking and baking. So really this channel is just how I cope with my ongoing identity crisis...but I hope it can be of service to you too.
Snow Skin & Traditional Mooncakes (Osmanthus Coconut Filling) | 桂花椰子冰皮&传统月饼
At this point I've made countless variations of mooncakes though I still can't ever decide on whether I enjoy baked traditional mooncakes or snow skin mooncakes.
Snow skin mooncakes are non-bake. They have such a unique texture and aesthetically they always come out super clean and detailed, giving you so much room for creativity.
Traditional mooncakes on the other hand do require baking. They are more of a pastry and possess a super flavourful crust. Additionally, they can be made much further in advance and in larger portions since they have a longer shelf life compared to snow skin mooncakes.
But why choose when you can have it all. So in this video I'll show you how to make the same flavour mooncake in both styles!

Coconut Filling:
1 large egg
50 g (3 tbsp) canned coconut milk
50 g (2 1/2 tbsp) sweetened condensed milk
30 g (1 1/2 tbsp) osmanthus sugar syrup (or honey)
30 g (2 tbsp) coconut oil (or unsalted butter)
100 g (1 cup + 2 tbsp) unsweetened desiccated coconut
20 g (2 1/2 tbsp) rice flour
5 g (2 1/2 tbsp) dried osmanthus flowers
Snow Skin:
Osmanthus tea:
1 1/2 tbsp dried osmanthus flowers
150 g (1/2 cup) milk
40 g (1/3 cup) glutinous rice flour
40 g (1/3 cup) rice flour
20 g (2 tbsp) cornstarch
45 g (1/2 cup) icing sugar
140 g (1/2 cup) osmanthus milk tea
20 g (1 tbsp) sweetened condensed milk
30 g (2 tbsp) coconut oil (or unsalted butter)
1/4 tsp matcha powder
Baked matcha crust:
180 g (1 1/2 cups) pastry flour or cake flour

hi jasma! Can i pls ask, what's the main difference between recipes that separate yolk n whites, and ones like yours that just whip them together? Also, does cooling the cake in the tins first upside down, or removing it within 10mins after taking it out from oven - how does it affect the cake?

for a recipe like this that relies heavily on the structure of eggs to create that airy sponge I do not believe there is a suitable replacement...you might have to refer to eggless sponges that are specifically designed to create that texture from other ingredients

I like this cake! Is it a sponge or chiffon?
I tried this recipe using cup measurements and it was a fail (im an experienced baker who has baked genoise cake btw). It was too much flour. I’d advise using weight measurements bcs cup measurements are never accurate and for such a small cake, the errors are more pronounced, so higher chances of failing. Also, heat up your egg and sugar mixture to about 40 degree celcius, bcs if u dont, it’ll take FOREVER to whip up, my kitchenaid was getting warm.

you can but you might need to split the batter between more pans so that it doesn't overflow when it rises in the oven!

I baked this for my husband it’s his birthday today. It took me about 1 hours to bake this, I had no whipper so I hand whipped everything. It was absolutely scrumptious.
